1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup long grain white rice, rinsed
2 cups vegetable broth
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground turmeric
1/4 teaspoon paprika
1/4 cup frozen peas
1/4 cup diced carrots

Instructions

Heat the olive oil in a medium pot over medium heat.
Add the chopped onion and sauté for 3-4 minutes until translucent.
Add the minced garlic and cook for 1 minute until fragrant.
Add the rinsed rice to the pot and stir to coat the rice with the oil, onion, and garlic mixture.
Pour in the vegetable broth and add salt, black pepper, ground turmeric, and paprika. Stir to combine.
Add the diced carrots and frozen peas on top of the rice mixture without stirring.
Bring the mixture to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid.
Simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
Remove the pot from heat and let it sit, covered, for 5 minutes.
Fluff the rice gently with a fork before serving.
