8 ounces elbow macaroni pasta
1 tablespoon olive oil
1 small yellow onion, finely chopped
2 cloves garlic, minced
1 can (14 ounces) crushed tomatoes
1 teaspoon sugar
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded mild cheddar cheese
1/2 cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley

Instructions

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
While the pasta cooks, heat olive oil in a large skillet over medium heat.
Add the chopped onion and sauté for 3-4 minutes until translucent.
Add the minced garlic and cook for 30 seconds until fragrant.
Pour in the crushed tomatoes, then stir in sugar, dried basil, dried oregano, salt, and black pepper.
Simmer the sauce for 8-10 minutes, stirring occasionally, until slightly thickened.
Add the cooked pasta to the skillet with the tomato sauce and stir to combine.
Sprinkle the shredded cheddar and mozzarella cheese over the pasta and stir until the cheese melts and the pasta is evenly coated.
Remove from heat and sprinkle grated Parmesan cheese and chopped fresh parsley on top.
Serve warm and enjoy!
