A moist and naturally sweet flourless apple cake made with fresh apples, ground almonds, and warm spices. Perfect for those avoiding flour but craving a delicious homemade dessert.
3 large apples, peeled, cored, and diced
4 large eggs
200 grams ground almonds (almond meal)
150 grams granulated sugar
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 teaspoon vanilla extract
50 grams unsalted butter, melted
Powdered sugar, for dusting
Preheat the oven to 175°C (350°F). Grease and line an 8-inch (20 cm) round cake pan with parchment paper.
In a large mixing bowl, beat the eggs and granulated sugar together until the mixture is pale and fluffy, about 3-4 minutes.
Add the vanilla extract and melted butter to the egg mixture and gently fold to combine.
In a separate bowl, combine the ground almonds, baking powder, ground cinnamon, ground nutmeg, and salt.
Gradually fold the dry ingredients into the wet ingredients until just combined.
Fold in the diced apples evenly throughout the batter.
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and allow it to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
Once cooled, dust the top with powdered sugar before serving.
