1 large cucumber, diced
2 medium tomatoes, diced
1 can (15 ounces) garbanzo beans, drained and rinsed
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon black pepper

Instructions

In a large mixing bowl, combine the diced cucumber, diced tomatoes, drained and rinsed garbanzo beans, finely chopped red onion, and chopped fresh parsley.
In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, ground cumin, salt, and black pepper until well combined to make the dressing.
Pour the dressing over the salad ingredients in the large bowl.
Toss gently until all ingredients are evenly coated with the dressing.
Let the salad sit for 5 minutes at room temperature to allow flavors to meld before serving.
Serve chilled or at room temperature.
