2 cups cooked chicken breast, shredded or diced
1/2 cup plain Greek yogurt
1/4 cup celery, finely chopped
2 tablespoons red onion, finely chopped
1 tablespoon fresh parsley, chopped
1 tablespoon fresh dill, chopped
1 teaspoon Dijon mustard
1 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
8 slices whole wheat bread
4 large lettuce leaves

Instructions

In a medium bowl, combine the cooked chicken, Greek yogurt, celery, red onion, parsley, and dill.
Add the Dijon mustard, lemon juice, salt, and black pepper to the bowl. Mix everything together until well combined.
Lay out 4 slices of whole wheat bread and place a large lettuce leaf on each slice.
Divide the chicken salad mixture evenly among the 4 slices with lettuce, spreading it evenly.
Top each with the remaining slices of bread to form sandwiches.
