1 medium red bell pepper, diced
1 medium yellow bell pepper, diced
1 medium cucumber, peeled and diced

1/4 cup Kalamata olives, pitted and sliced
1/4 cup extra virgin olive oil
3 tablespoons fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley

Instructions

In a large mixing bowl, combine the diced red bell pepper, yellow bell pepper, cucumber, zucchini, cherry tomatoes, red onion, and Kalamata olives.
In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, dried oregano, sea salt, and freshly ground black pepper until well combined.
Pour the dressing over the mixed vegetables and toss gently to coat all the ingredients evenly.
