1 cup long grain white rice
2 cups low sodium beef broth
1 tablespoon olive oil
1 small yellow onion, finely chopped
2 cloves garlic, minced
1 pound ground beef
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4 cup chopped fresh parsley
Rinse the rice under cold water until the water runs clear, then drain well.
In a medium saucepan, bring the beef broth to a boil.
Add the rinsed rice and turmeric to the boiling broth, stir once, then reduce heat to low and cover.
Simmer the rice for 18-20 minutes, or until the liquid is absorbed and the rice is tender.
