Chicken Broccoli Casserole with Knorr Rice

A comforting and easy-to-make chicken broccoli casserole featuring Knorr rice for a flavorful, creamy, and hearty meal perfect for weeknight dinners.

2 cups cooked chicken breast, shredded
1 package (5.6 oz) Knorr Chicken Flavor Rice Mix
1 1/2 cups broccoli florets, steamed
1 cup shredded sharp cheddar cheese
1/2 cup shredded mozzarella cheese
1 can (10.5 oz) condensed cream of mushroom soup
1/2 cup sour cream
1/2 cup milk
1/4 cup diced onion
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 cup grated Parmesan cheese

Instructions

Preheat the oven to 350°F (175°C).
Prepare the Knorr Chicken Flavor Rice Mix according to package instructions and set aside.
In a medium skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent and fragrant, about 3-4 minutes.
In a large mixing bowl, combine the cooked rice, shredded chicken, steamed broccoli, sautéed onions and garlic, cream of mushroom soup, sour cream, milk, black pepper, salt, and paprika. Mix well until all ingredients are evenly incorporated.
Stir in 1/2 cup shredded cheddar cheese and 1/2 cup shredded mozzarella cheese into the mixture.
Transfer the mixture into a greased 9×13 inch casserole dish and spread evenly.
Sprinkle the remaining 1/2 cup shredded cheddar cheese and grated Parmesan cheese evenly over the top of the casserole.
Bake uncovered in the preheated oven for 30 minutes, or until the casserole is bubbly and the cheese on top is melted and lightly golden.
Remove from oven and let rest for 5 minutes before serving.
