2 tablespoons olive oil
1 medium yellow onion, diced
3 medium carrots, peeled and sliced
3 celery stalks, sliced
3 garlic cloves, minced
8 cups low-sodium chicken broth
2 cups cooked chicken breast, shredded
1 cup orzo pasta
1 teaspoon dried thyme
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Juice of 1/2 lemon

Instructions

Heat olive oil in a large pot over medium heat.
Add diced onion, sliced carrots, and sliced celery to the pot. Sauté for 5-7 minutes until vegetables are softened.
Add minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and bring to a boil.
Once boiling, reduce heat to medium-low and add shredded cooked chicken, dried thyme, dried parsley, salt, and black pepper.
Simmer the soup for 15 minutes to allow flavors to meld.
Add the orzo pasta to the pot and cook for 8-10 minutes until the orzo is tender.
Stir in fresh parsley and lemon juice.
Taste and adjust seasoning with additional salt and pepper if needed.
Serve hot.
