1 pound ground beef
1 medium onion, diced
3 cloves garlic, minced
3 medium carrots, peeled and diced
2 stalks celery, diced
1 medium potato, peeled and diced
1 (14.5 ounce) can diced tomatoes with juice
6 cups beef broth
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon black pepper
1 teaspoon salt
1 cup frozen green beans, cut into 1-inch pieces
1 cup frozen corn kernels
2 tablespoons olive oil

Instructions

Heat olive oil in a large pot over medium heat.
Add diced onion and cook for 3-4 minutes until softened.
Add minced garlic and cook for 1 minute until fragrant.
Add ground beef to the pot and cook, breaking it apart with a spoon, until browned and no longer pink, about 6-8 minutes.
Drain excess fat from the pot if necessary.
Add diced carrots, celery, and potato to the pot and stir to combine.
Pour in the beef broth and canned diced tomatoes with their juice.
Add dried thyme, dried oregano, black pepper, and salt. Stir well.
Bring the soup to a boil, then reduce heat to low and simmer uncovered for 25 minutes, or until the vegetables are tender.
