A quick and easy one pot pasta dish featuring ground beef, tomatoes, and Italian seasonings, perfect for a hearty weeknight meal with minimal cleanup.
1 tablespoon olive oil
1 pound ground beef
1 medium yellow onion, diced
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (14.5 ounce) can diced tomatoes with juice
4 cups beef broth
8 ounces uncooked penne pasta
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.
Add ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
Add diced onion and cook until softened, about 3 minutes.
Stir in minced garlic, dried oregano, dried basil, crushed red pepper flakes, salt, and black pepper; cook for 1 minute until fragrant.
Add diced tomatoes with their juice, beef broth, and uncooked penne pasta to the pot. Stir to combine.
Bring the mixture to a boil, then reduce heat to medium-low and simmer uncovered, stirring occasionally, until pasta is cooked al dente and liquid is mostly absorbed, about 15-18 minutes.
Remove from heat and stir in grated Parmesan cheese until melted and well combined.
