2 tablespoons olive oil
1 medium yellow onion, diced
3 medium carrots, peeled and diced
3 celery stalks, diced
3 garlic cloves, minced
8 cups low-sodium chicken broth
2 cups cooked chicken breast, shredded
1 cup orzo pasta
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/2 teaspoon salt
2 cups fresh baby spinach, chopped
2 tablespoons fresh parsley, chopped
1 tablespoon fresh lemon juice
Heat olive oil in a large pot over medium heat.
Add diced onion, carrots, and celery to the pot and sauté for 5-7 minutes until vegetables are softened.
Add minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and bring to a boil.
Add shredded cooked chicken, dried thyme, dried oregano, black pepper, and salt to the pot.
Reduce heat to medium-low and simmer for 10 minutes.
Add orzo pasta to the soup and cook for an additional 8-10 minutes until orzo is tender.
Stir in chopped baby spinach and cook for 2 minutes until wilted.
Remove the pot from heat and stir in fresh parsley and lemon juice.
