1 1/2 cups peanut butter cookie crumbs (about 20 cookies, crushed)
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
1 cup cream cheese, softened
1/2 cup creamy peanut butter
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy cream, cold
2 tablespoons granulated sugar
Preheat the oven to 350°F (175°C).
In a medium bowl, combine the peanut butter cookie crumbs and 1/4 cup granulated sugar.
Add the melted unsalted butter to the cookie crumb mixture and stir until evenly combined.
Press the mixture firmly into the bottom and slightly up the sides of a 9-inch (23 cm) pie dish to form the crust.
