A comforting and easy-to-make cheesy chicken tater tot casserole baked to golden perfection. This hearty dish combines tender chicken, creamy sauce, vegetables, and crispy tater tots for a family-friendly meal.
1 pound boneless skinless chicken breasts, cooked and shredded
1 (10.5 ounce) can condensed cream of chicken soup
1 cup sour cream
1 cup shredded sharp cheddar cheese
1 cup frozen mixed vegetables (carrots, peas, corn), thawed
1 small onion, finely chopped
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme
2 cups frozen tater tots
2 tablespoons olive oil
Preheat the oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat. Add the chopped onion and minced garlic; sauté for 3-4 minutes until softened and fragrant.
In a large mixing bowl, combine the shredded chicken, sautéed onion and garlic, cream of chicken soup, sour cream, shredded cheddar cheese, thawed mixed vegetables, salt, black pepper, and dried thyme. Mix well until all ingredients are evenly incorporated.
Transfer the mixture into a 9×13-inch baking dish and spread it out evenly.
Arrange the frozen tater tots in a single layer over the top of the chicken mixture, covering the entire surface.
Bake uncovered in the preheated oven for 40-45 minutes, or until the tater tots are golden brown and crispy, and the casserole is bubbly around the edges.
Remove from the oven and let the casserole rest for 5 minutes before serving.
