A comforting and hearty creamy chicken gnocchi kale soup made with tender chicken, pillowy gnocchi, fresh kale, and a rich creamy broth. Perfect for a cozy meal any day of the week.
2 tablespoons olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
2 medium carrots, peeled and diced
2 celery stalks, diced
4 cups cooked chicken breast, shredded
6 cups low-sodium chicken broth
1 cup heavy cream
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (16-ounce) package potato gnocchi
4 cups kale, stems removed and leaves chopped
Heat olive oil in a large pot over medium heat.
Add diced onion, carrots, and celery. Cook, stirring occasionally, until vegetables are softened, about 5 minutes.
Add minced garlic and cook for 1 minute until fragrant.
Pour in chicken broth and bring to a boil.
Add shredded cooked chicken, dried thyme, dried rosemary, salt, and black pepper. Reduce heat and simmer for 10 minutes.
Add the gnocchi to the pot and cook according to package instructions, usually about 2-3 minutes, until they float to the surface.
Stir in chopped kale and cook for an additional 3-4 minutes until kale is wilted and tender.
Reduce heat to low and stir in heavy cream. Heat through without boiling, about 2 minutes.
Taste and adjust seasoning with additional salt and pepper if needed.
Serve hot.
