These crispy smashed sweet potatoes are perfectly tender on the inside and irresistibly crispy on the outside. Made in the air fryer for a quick and healthy side dish or snack.
4 medium sweet potatoes (about 1.5 pounds), washed
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley (for garnish)
Preheat the air fryer to 400°F (200°C).
Place the whole sweet potatoes in a large pot and cover with water. Bring to a boil over high heat and cook until the potatoes are fork-tender, about 15 minutes.
Drain the sweet potatoes and let them cool slightly until safe to handle.
Place the cooked sweet potatoes on a cutting board or baking sheet. Using the bottom of a sturdy glass or a potato masher, gently press down on each sweet potato to flatten it to about 1/2 inch thickness, being careful not to break them apart.
Brush both sides of each smashed sweet potato with olive oil.
In a small bowl, mix together the garlic powder, smoked paprika, salt, and black pepper. Sprinkle this seasoning mixture evenly over both sides of the smashed sweet potatoes.
Arrange the sweet potatoes in a single layer in the air fryer basket. You may need to cook them in batches depending on the size of your air fryer.
Air fry at 400°F (200°C) for 10 minutes. Flip the sweet potatoes and air fry for an additional 8-10 minutes or until they are golden brown and crispy on the edges.
Remove from the air fryer and transfer to a serving plate.
Garnish with chopped fresh parsley and serve immediately.
