2 medium apples, peeled, cored, and diced
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 large eggs
1/2 cup unsweetened applesauce
1/4 cup plain Greek yogurt
1/4 cup melted coconut oil
1 teaspoon vanilla extract
1/3 cup erythritol sweetener
Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a medium bowl, whisk together the whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
In a large bowl, beat the eggs. Add the unsweetened applesauce, plain Greek yogurt, melted coconut oil, vanilla extract, and erythritol sweetener. Mix well until combined.
