3 large apples, peeled, cored, and diced
4 large eggs
200 grams ground almonds (almond meal)
150 grams granulated sugar
1 teaspoon baking powder (gluten-free)
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 teaspoon vanilla extract
50 grams unsalted butter, melted
2 tablespoons honey
Preheat the oven to 175°C (350°F). Grease a 9-inch (23 cm) round cake pan and line the bottom with parchment paper.
In a large mixing bowl, beat the eggs and granulated sugar together until the mixture is pale and fluffy, about 3-4 minutes.
Add the vanilla extract and melted butter to the egg mixture and stir to combine.
