1 pound lean ground beef (90% lean)
1 tablespoon olive oil
1 medium red bell pepper, diced
1 medium green bell pepper, diced
1 small yellow onion, diced
2 cloves garlic, minced
1 cup cooked quinoa
2 cups fresh spinach, chopped
1/4 cup low sodium soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
2 green onions, thinly sliced
1 tablespoon toasted sesame seeds
Heat olive oil in a large skillet over medium-high heat.
Add diced onion and cook for 2-3 minutes until translucent.
Add minced garlic and cook for 30 seconds until fragrant.
Add lean ground beef to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes.
While beef is cooking, in a small bowl, whisk together soy sauce, honey, rice vinegar, grated ginger, black pepper, and crushed red pepper flakes to make the sauce.
Add diced red and green bell peppers to the skillet with the beef. Cook for 3-4 minutes until peppers are tender-crisp.
Pour the sauce over the beef and vegetables. Stir well to combine and cook for another 2 minutes to let the flavors meld.
Remove skillet from heat and stir in chopped spinach until wilted.
To assemble the bowls, divide cooked quinoa evenly among four bowls.
Top each bowl with the beef and vegetable mixture.
Garnish each bowl with sliced green onions and toasted sesame seeds.
Serve immediately.
