A creamy, cheesy, and comforting chicken and rice casserole inspired by the viral TikTok recipe. This easy one-pan meal combines tender chicken breasts, fluffy rice, and a rich sauce made with cream cheese and cheddar for a delicious family dinner.
2 cups long grain white rice, rinsed
4 boneless skinless chicken breasts, whole
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
3 cups chicken broth, low sodium
1 cup water
8 ounces cream cheese, softened and cut into cubes
1 1/2 cups shredded sharp cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup diced yellow onion
3 cloves garlic, minced
2 tablespoons olive oil
1/4 cup chopped fresh parsley, for garnish
Preheat the oven to 375°F (190°C).
In a large oven-safe casserole dish (at least 9×13 inches), add the rinsed rice evenly across the bottom.
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, smoked paprika, and dried thyme.
Rub the seasoning mixture evenly over both sides of each chicken breast.
Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic and sauté for 2-3 minutes until fragrant and translucent.
Add the sautéed onion and garlic evenly over the rice in the casserole dish.
Place the seasoned chicken breasts on top of the rice and onions in the casserole dish.
Pour the chicken broth and water evenly over the rice and chicken.
Dot the cream cheese cubes evenly over the casserole.
Cover the casserole dish tightly with aluminum foil.
Bake in the preheated oven for 40 minutes.
Remove the foil and sprinkle the shredded cheddar and mozzarella cheeses evenly over the chicken and rice.
Return the casserole to the oven, uncovered, and bake for an additional 5 minutes or until the cheese is melted and bubbly and the chicken is cooked through (internal temperature of 165°F / 74°C).
Remove from oven and let rest for 5 minutes.
Garnish with chopped fresh parsley before serving.
