1 medium red bell pepper, cut into 1-inch strips
1 medium yellow bell pepper, cut into 1-inch strips
1 medium zucchini, sliced into 1/2-inch thick rounds
8 ounces cremini mushrooms, cleaned and halved
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a large bowl, combine the red bell pepper strips, yellow bell pepper strips, zucchini rounds, and halved mushrooms.
Drizzle the olive oil over the vegetables and toss to coat evenly.
