2 cups long grain white rice, uncooked
4 boneless, skinless chicken breasts
1 can (10.5 oz) condensed cream of mushroom soup
1 can (10.5 oz) condensed cream of chicken soup
2 1/2 cups chicken broth
1 cup shredded sharp cheddar cheese
1 medium onion, finely chopped
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried parsley
1/2 teaspoon black pepper
1/2 teaspoon salt
2 tablespoons olive oil

Instructions

Preheat the oven to 375°F (190°C).
In a large mixing bowl, combine the uncooked rice, cream of mushroom soup, cream of chicken soup, chicken broth, chopped onion, minced garlic, dried thyme, dried parsley, salt, and black pepper. Stir until well combined.
Lightly grease a 9×13 inch casserole dish with 1 tablespoon of olive oil.
Pour the rice mixture evenly into the prepared casserole dish.
Rub the chicken breasts with the remaining 1 tablespoon of olive oil and season lightly with salt and pepper on both sides.
Place the chicken breasts on top of the rice mixture in the casserole dish.
Cover the casserole dish tightly with aluminum foil.
Bake in the preheated oven for 40 minutes.
Remove the foil and sprinkle the shredded cheddar cheese evenly over the chicken and rice.
Return the casserole to the oven uncovered and bake for an additional 10 minutes, or until the cheese is melted and bubbly, and the chicken reaches an internal temperature of 165°F (74°C).
Remove from the oven and let the casserole rest for 5 minutes before serving.
