2 cups cooked chicken breast, shredded or diced
1/2 cup plain Greek yogurt
1/4 cup celery, finely chopped
2 tablespoons red onion, finely chopped
1 tablespoon fresh parsley, chopped
1 teaspoon Dijon mustard
1/2 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
8 slices whole wheat bread
4 large lettuce leaves

Instructions

In a medium bowl, combine the cooked chicken, Greek yogurt, chopped celery, red onion, and fresh parsley.
Add the Dijon mustard, lemon juice, salt, and black pepper to the bowl.
Mix all ingredients thoroughly until well combined and creamy.
Lay out the bread slices on a clean surface.
Place a large lettuce leaf on 4 of the bread slices.
Divide the chicken salad evenly among the 4 bread slices with lettuce, spreading it out evenly.
Top each with the remaining bread slices to form sandwiches.
Cut each sandwich in half if desired and serve immediately.
