2 cups cooked chicken breast, shredded or diced
1/2 cup celery, finely chopped
1/4 cup dill pickles, finely chopped
1/4 cup red onion, finely chopped
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon lemon juice
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon salt
8 slices whole wheat sandwich bread
4 large lettuce leaves
8 slices tomato
In a large mixing bowl, combine the shredded chicken, chopped celery, chopped dill pickles, and chopped red onion.
In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, garlic powder, black pepper, and salt until smooth.
Pour the dressing over the chicken mixture and stir until all ingredients are evenly coated.
