3 medium carrots, peeled and cut into 1-inch pieces
2 medium parsnips, peeled and cut into 1-inch pieces
2 medium sweet potatoes, peeled and cut into 1-inch cubes
1 large red onion, peeled and cut into wedges
2 tablespoons olive oil
3 tablespoons pure maple syrup
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Preheat the oven to 400°F (200°C).
In a large mixing bowl, combine the carrots, parsnips, sweet potatoes, and red onion.
In a small bowl, whisk together the olive oil, maple syrup, dried thyme, dried rosemary, salt, and black pepper until well combined.
