3 medium carrots, peeled and cut into 1-inch pieces
2 medium parsnips, peeled and cut into 1-inch pieces
2 medium sweet potatoes, peeled and cut into 1-inch cubes
2 medium beets, peeled and cut into 1-inch cubes
1 large red onion, peeled and cut into wedges
3 tablespoons olive oil
3 tablespoons pure maple syrup
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped

Instructions

Preheat the oven to 400°F (200°C).
In a large mixing bowl, combine the carrots, parsnips, sweet potatoes, beets, and red onion.
In a small bowl, whisk together the olive oil, maple syrup, dried thyme, salt, and black pepper until well combined.
Pour the maple glaze over the root vegetables and toss thoroughly to coat all pieces evenly.
Spread the coated vegetables in a single layer on a large baking sheet lined with parchment paper.
Roast in the preheated oven for 35 to 40 minutes, stirring halfway through, until the vegetables are tender and caramelized.
Remove from the oven and transfer to a serving dish.
