2 cups all-purpose flour, plus extra for dusting
1 teaspoon active dry yeast
3/4 cup warm water (about 110°F)
1 teaspoon sugar
1 teaspoon salt
1 tablespoon olive oil, plus extra for greasing
1/2 cup tomato sauce
8 ounces fresh mozzarella cheese, sliced
10 fresh basil leaves
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes (optional)
1 tablespoon grated Parmesan cheese

Instructions

In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for 5 minutes until frothy.
In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and 1 tablespoon olive oil.
Mix the ingredients together until a dough forms. Transfer to a lightly floured surface and knead for about 7 minutes until smooth and elastic.
Lightly grease a sheet pan (approximately 13×18 inches) with olive oil.
Place the dough on the sheet pan and stretch or roll it out evenly to fit the pan. Cover with a clean kitchen towel and let it rise in a warm place for 10 minutes.
Preheat the oven to 475°F (245°C).
Spread the tomato sauce evenly over the dough, leaving about a 1/2-inch border around the edges.
Arrange the sliced mozzarella cheese evenly on top of the sauce.
Sprinkle dried oregano and grated Parmesan cheese over the pizza. Add crushed red pepper flakes if using.
Bake the pizza in the preheated oven for 15 to 20 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
Remove the pizza from the oven and immediately scatter fresh basil leaves on top.
Let the pizza cool for 5 minutes before slicing and serving.
