A moist and tender lemon oil cake with a bright citrus flavor, perfect for any occasion. This cake uses vegetable oil for a soft crumb and is topped with a simple lemon glaze for extra zing.
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 large eggs
1 cup granulated sugar
1/2 cup vegetable oil
1/2 cup plain yogurt
2 tablespoons freshly grated lemon zest
1/4 cup freshly squeezed lemon juice
1 teaspoon vanilla extract
For the glaze:
1 cup powdered sugar
2 tablespoons freshly squeezed lemon juice
Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.
In a large bowl, beat the eggs and granulated sugar together using a hand mixer or whisk until the mixture is pale and slightly thickened, about 2-3 minutes.
Add the vegetable oil, plain yogurt, lemon zest, lemon juice, and vanilla extract to the egg mixture. Mix until fully incorporated.
