2 medium russet potatoes, peeled and diced into 1/2-inch cubes
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon smoked paprika
4 large eggs

Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a medium bowl, toss the diced potatoes with olive oil, salt, black pepper, and smoked paprika until evenly coated.
Place the seasoned potatoes in the air fryer basket in a single layer. Cook for 12 minutes, shaking the basket halfway through cooking to ensure even crisping.
While the potatoes cook, spray a small heatproof dish or ramekin with cooking spray.
After the potatoes have cooked for 12 minutes, carefully crack two eggs into the prepared dish.
