A flavorful and easy one pot pasta dish featuring spicy chorizo, tomatoes, and creamy cheese, perfect for a quick weeknight dinner.
200 grams Spanish chorizo, sliced
1 tablespoon olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 can (400 grams) diced tomatoes
4 cups (950 ml) chicken broth
300 grams penne pasta
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/4 teaspoon red chili flakes
Salt, to taste
Black pepper, to taste
50 grams grated Parmesan cheese
2 tablespoons chopped fresh parsley
Heat olive oil in a large pot over medium heat.
Add sliced chorizo and cook for 4-5 minutes until it starts to brown and release its oil.
Add chopped onion and cook for 3 minutes until softened.
Stir in minced garlic and cook for 1 minute until fragrant.
Add diced tomatoes, chicken broth, smoked paprika, dried oregano, red chili flakes, salt, and black pepper to the pot. Stir to combine.
Add the penne pasta to the pot and bring the mixture to a boil.
Reduce heat to medium-low and simmer uncovered, stirring occasionally, for 12-15 minutes or until the pasta is cooked and the liquid has mostly absorbed.
Remove the pot from heat and stir in grated Parmesan cheese until melted and creamy.
Sprinkle chopped fresh parsley over the pasta before serving.
