One Pot Pasta and Sausage

A quick and hearty one pot pasta and sausage dish that combines savory sausage, tender pasta, and a flavorful tomato sauce all cooked together for easy cleanup and maximum taste.

1 tablespoon olive oil
12 ounces Italian sausage, casings removed
1 medium yellow onion, diced
3 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
4 cups low sodium chicken broth
8 ounces uncooked penne pasta
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Freshly ground black pepper, to taste
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley

Instructions

Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.
Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes.
Add the diced onion and cook until softened, about 3 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the diced tomatoes with their juice, chicken broth, uncooked penne pasta, dried oregano, dried basil, and crushed red pepper flakes to the pot. Stir to combine.
Bring the mixture to a boil, then reduce heat to medium-low and simmer uncovered, stirring occasionally, until the pasta is tender and most of the liquid is absorbed, about 12-15 minutes.
Season with salt and freshly ground black pepper to taste.
Remove from heat and stir in the grated Parmesan cheese until melted and well combined.
Garnish with chopped fresh parsley before serving.
