12 ounces penne pasta
1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 medium red bell pepper, diced
1 medium zucchini, diced
1 can (14.5 ounces) diced tomatoes with juice
4 cups vegetable broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
In a large pot or deep skillet, heat olive oil over medium heat.
Add diced onion and cook for 3-4 minutes until softened.
Add minced garlic and cook for 1 minute until fragrant.
Add diced red bell pepper and zucchini, cooking for 3-4 minutes until slightly tender.
Pour in the diced tomatoes with their juice and vegetable broth.
Add dried oregano, dried basil, red pepper flakes, salt, and black pepper. Stir to combine.
Add the penne pasta to the pot and stir to submerge the pasta in the liquid.
Bring the mixture to a boil, then reduce heat to medium-low and simmer uncovered for 12-15 minutes, stirring occasionally, until the pasta is cooked and the sauce has thickened.
Remove the pot from heat and stir in grated Parmesan cheese until melted and well combined.
