One Pot Pasta Thon

A quick and easy one pot pasta recipe with tuna, tomatoes, and spinach, perfect for a nutritious weeknight meal.

12 ounces dried penne pasta
1 (14.5 ounces) can diced tomatoes with juice
1 (5 ounces) can tuna in olive oil, drained
4 cups fresh baby spinach
1 medium onion, finely chopped
3 cloves garlic, minced
4 cups vegetable broth
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
1/4 cup grated Parmesan cheese

Instructions

Heat olive oil in a large pot over medium heat.
Add the chopped onion and cook for 3-4 minutes until softened.
Add the minced garlic, dried oregano, and crushed red pepper flakes; cook for 1 minute until fragrant.
Pour in the vegetable broth, diced tomatoes with their juice, and add the dried penne pasta.
Stir to combine and bring the mixture to a boil.
Reduce heat to medium-low and simmer uncovered for 12-15 minutes, stirring occasionally, until the pasta is cooked and most of the liquid is absorbed.
Add the drained tuna and fresh baby spinach to the pot, stirring gently until the spinach wilts, about 2-3 minutes.
Season with salt and black pepper to taste.
Remove from heat and sprinkle grated Parmesan cheese over the pasta.
Serve immediately.
