One Pot Pasta Ziti

A simple and delicious one pot pasta ziti recipe that combines pasta, tomato sauce, and cheese for a comforting meal with minimal cleanup.

12 ounces dry ziti pasta
1 tablespoon olive oil
3 cloves garlic, minced
1 small onion, finely chopped
1 teaspoon dried oregano
1 teaspoon dried basil
1/4 teaspoon red pepper flakes
1 (28-ounce) can crushed tomatoes
3 cups vegetable broth
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley

Instructions

Heat the olive oil in a large pot or deep skillet over medium heat.
Add the minced garlic and chopped onion to the pot and sauté for 3-4 minutes until the onion is translucent and fragrant.
Stir in the dried oregano, dried basil, and red pepper flakes, cooking for 30 seconds to release their aromas.
Add the dry ziti pasta, crushed tomatoes, vegetable broth, salt, and black pepper to the pot. Stir to combine all ingredients evenly.
Bring the mixture to a boil over high heat, then reduce the heat to medium-low and simmer uncovered for 15-20 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Remove the pot from heat and stir in half of the shredded mozzarella cheese and half of the grated Parmesan cheese until melted and well combined.
Sprinkle the remaining mozzarella and Parmesan cheese on top, cover the pot, and let it sit for 2-3 minutes to allow the cheese to melt.
Garnish with chopped fresh parsley before serving.
