A simple and flavorful one pot rice recipe that is easy to prepare and perfect as a side dish or a base for your favorite meals.
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup long grain white rice, rinsed
2 cups low sodium chicken broth
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground turmeric
1/4 cup frozen peas
Heat the olive oil in a medium pot over medium heat.
Add the chopped onion and sauté for 3-4 minutes until translucent.
Add the minced garlic and cook for 1 minute until fragrant.
Add the rinsed rice to the pot and stir to coat the rice with the oil, onion, and garlic mixture.
Pour in the chicken broth, then add salt, black pepper, and turmeric. Stir to combine.
Bring the mixture to a boil, then reduce heat to low and cover the pot with a tight-fitting lid.
Simmer for 15 minutes without lifting the lid.
After 15 minutes, add the frozen peas on top of the rice, cover again, and cook for an additional 5 minutes.
Remove the pot from heat and let it sit covered for 5 minutes.
Fluff the rice with a fork before serving.
