1 pound ground beef (80% lean)
1 medium yellow onion, diced
2 cloves garlic, minced
1 medium green bell pepper, diced
1 medium red bell pepper, diced
1 cup diced tomatoes (canned, no added sugar)
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1/2 teaspoon salt
2 tablespoons olive oil
1/4 cup chopped fresh cilantro
Heat olive oil in a large skillet over medium heat.
Add diced onion and cook for 3-4 minutes until softened.
Add minced garlic and cook for 1 minute until fragrant.
Add ground beef to the skillet and cook, breaking it apart with a spatula, until browned and cooked through, about 7-8 minutes.
Drain excess fat from the skillet if necessary.
Add diced green and red bell peppers to the skillet and cook for 3-4 minutes until slightly softened.
Stir in diced tomatoes, smoked paprika, ground cumin, chili powder, dried oregano, black pepper, and salt.
Reduce heat to low and simmer for 5 minutes, stirring occasionally.
Remove from heat and stir in chopped fresh cilantro.
Serve warm as a main dish or with low carb sides.
