Salmon fillet (6 oz)
Pineapple juice (1/2 cup)
Brown sugar (2 tbsp)
Soy sauce (1 tbsp)
Garlic (1 clove, minced)
Fresh ginger (1 tsp, grated)
Olive oil (1 tbsp)
Salt (to taste)
Black pepper (to taste)
Preheat oven to 375°F (190°C).
In a small saucepan, combine pineapple juice, brown sugar, soy sauce, minced garlic, and grated ginger. Bring to a simmer over medium heat and cook until slightly thickened, about 5 minutes. Set aside.
Pat salmon dry and season with salt and black pepper.
Heat olive oil in an oven-safe skillet over medium-high heat.
Place salmon fillet skin-side down and sear for 3-4 minutes until the exterior is crisp and golden.
Flip salmon and brush the top with pineapple glaze.
Transfer skillet to the preheated oven and bake for 8-10 minutes until salmon is cooked through and flakes easily with a fork.
Remove from oven and drizzle additional pineapple glaze evenly over the top.
Plate the salmon fillet centered on a white round plate, garnish with thin pineapple slices and chopped fresh cilantro on the side.
