1 pound fully cooked chicken sausage, sliced into 1/2-inch pieces
2 medium sweet potatoes, peeled and cut into 1-inch cubes
1 large head of broccoli, cut into florets
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

Preheat the oven to 425°F (220°C).
Line a large sheet pan with parchment paper or lightly grease it with olive oil.
In a large bowl, combine the sweet potato cubes with 1 1/2 tablespoons of olive oil, 1/2 teaspoon of garlic powder, 1/2 teaspoon of dried thyme, 1/4 teaspoon of smoked paprika, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Toss well to coat evenly.
Spread the sweet potatoes evenly on one side of the prepared sheet pan.
Roast the sweet potatoes in the preheated oven for 10 minutes.
Meanwhile, in the same bowl, combine the broccoli florets with the remaining 1 1/2 tablespoons of olive oil, 1/2 teaspoon of garlic powder, 1/2 teaspoon of dried thyme, 1/4 teaspoon of smoked paprika, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Toss to coat.
After the sweet potatoes have roasted for 10 minutes, remove the sheet pan from the oven.
Add the broccoli florets and sliced chicken sausage to the sheet pan, spreading them evenly on the other side and in the middle, ensuring everything is in a single layer.
Return the sheet pan to the oven and roast for an additional 20 minutes, or until the sweet potatoes are tender and the broccoli is crisp-tender with some browned edges. Stir halfway through to ensure even cooking.
Remove from the oven and let cool for 2 minutes before serving.
