A flavorful and tender beef pepper steak slow-cooked to perfection in a crock pot. This easy recipe combines tender strips of beef with colorful bell peppers and a savory sauce for a comforting and delicious meal.

1 pound beef sirloin, sliced into thin strips
1 red bell pepper, sliced into thin strips
1 green bell pepper, sliced into thin strips
1 yellow bell pepper, sliced into thin strips
1 medium onion, sliced
3 cloves garlic, minced
1 cup beef broth
1/4 cup low sodium soy sauce
2 tablespoons cornstarch
2 tablespoons water
1 tablespoon brown sugar
1 teaspoon ground black pepper
1/2 teaspoon salt
2 tablespoons vegetable oil

Instructions

In a large skillet, heat vegetable oil over medium-high heat.
Add the beef strips and sear for 2-3 minutes until browned but not fully cooked. Remove beef and set aside.
In the same skillet, add the sliced onions and minced garlic. Sauté for 2 minutes until fragrant.
Transfer the beef, onions, and garlic to the crock pot.
Add the sliced red, green, and yellow bell peppers to the crock pot.
In a bowl, whisk together beef broth, soy sauce, brown sugar, ground black pepper, and salt.
Pour the sauce mixture over the beef and vegetables in the crock pot.
Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until beef is tender.
About 30 minutes before serving, mix cornstarch and water in a small bowl until smooth to create a slurry.
Stir the cornstarch slurry into the crock pot to thicken the sauce.
Cover and cook on high for an additional 20-30 minutes until sauce has thickened.
Stir well before serving. Serve hot over steamed rice or noodles if desired.
