1 pound beef chuck roast, cut into 1-inch cubes
1 medium onion, finely chopped
3 cloves garlic, minced
2 medium carrots, peeled and diced
2 stalks celery, diced
1 can (14.5 ounces) diced tomatoes, undrained
4 cups beef broth
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/2 teaspoon salt
1 cup orzo pasta
2 tablespoons olive oil
1/4 cup fresh parsley, chopped

Instructions

Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
Add the beef cubes and brown on all sides, about 5 minutes. Transfer the beef to the slow cooker.
In the same skillet, add the chopped onion, carrots, celery, and minced garlic. Sauté for 3-4 minutes until vegetables are slightly softened.
Transfer the sautéed vegetables to the slow cooker with the beef.
Add the diced tomatoes with their juice, beef broth, dried oregano, dried thyme, salt, and black pepper to the slow cooker. Stir to combine.
Cover and cook on low for 5 hours.
After 5 hours, add the orzo pasta to the slow cooker and stir well.
Cover and cook on high for an additional 1 hour, or until the orzo is tender and beef is fork-tender.
Stir in the chopped fresh parsley before serving.
