1.5 pounds beef chuck roast, cut into 1-inch cubes
1 medium onion, finely chopped
3 cloves garlic, minced
2 medium carrots, peeled and diced
2 stalks celery, diced
1 (14.5 ounces) can diced tomatoes, undrained
4 cups low-sodium beef broth
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
1/2 teaspoon black pepper
1 teaspoon salt
1 cup orzo pasta
2 tablespoons olive oil
2 tablespoons chopped fresh parsley

Instructions

Heat olive oil in a large skillet over medium-high heat.
Add beef cubes and brown on all sides, about 5 minutes. Transfer browned beef to the slow cooker.
In the same skillet, add chopped onion, carrots, and celery. Cook for 3-4 minutes until vegetables begin to soften.
Add minced garlic and cook for 1 minute until fragrant.
Transfer the cooked vegetables and garlic to the slow cooker.
Add diced tomatoes with their juice, beef broth, dried oregano, dried thyme, smoked paprika, black pepper, and salt to the slow cooker. Stir to combine.
Cover and cook on low for 6 hours, or until beef is tender.
About 30 minutes before serving, stir in the orzo pasta. Cover and continue cooking on low until orzo is tender, about 25-30 minutes.
Stir in chopped fresh parsley before serving.
