A creamy and comforting slow cooker chicken recipe made with tender chicken breasts cooked in a rich cream cheese sauce. Perfect for an easy weeknight dinner served over rice or pasta.
4 boneless skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon dried thyme
8 ounces cream cheese, softened and cut into cubes
1 cup chicken broth
1/2 cup sour cream
2 cloves garlic, minced
1 tablespoon olive oil
2 tablespoons chopped fresh parsley
Season the chicken breasts evenly with salt, black pepper, garlic powder, onion powder, paprika, and dried thyme on both sides.
In a large skillet, heat olive oil over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until lightly browned. Remove from heat.
Place the seared chicken breasts into the slow cooker.
Add minced garlic, chicken broth, and cream cheese cubes on top of the chicken breasts in the slow cooker.
Cover and cook on low for 4 to 4 1/2 hours, until the chicken is cooked through and tender.
About 15 minutes before serving, remove the chicken breasts and stir sour cream into the sauce in the slow cooker until smooth and creamy.
Return the chicken to the slow cooker and coat with the creamy sauce.
Sprinkle chopped fresh parsley over the chicken before serving.
