3 pounds beef chuck roast
1 tablespoon olive oil
1 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1 cup beef broth
2 tablespoons Worcestershire sauce
1 medium yellow onion, sliced
3 cloves garlic, minced

Instructions

Pat the beef chuck roast dry with paper towels.
In a small bowl, mix together kosher salt, black pepper, garlic powder, onion powder, smoked paprika, dried thyme, and dried rosemary.
Rub the spice mixture evenly all over the roast.
Heat olive oil in a large skillet over medium-high heat.
Sear the roast for 3-4 minutes on each side until browned.
Transfer the seared roast to the slow cooker.
Add sliced yellow onion and minced garlic on top and around the roast in the slow cooker.
Pour beef broth and Worcestershire sauce over the roast.
Cover and cook on low for 8 hours, or until the roast is tender and easily shredded with a fork.
