A hearty and healthy slow cooker turkey quinoa chili packed with lean ground turkey, protein-rich quinoa, beans, and a blend of spices. Perfect for a comforting meal that’s easy to prepare and full of flavor.
1 pound lean ground turkey
1 cup quinoa, rinsed
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) kidney beans, drained and rinsed
1 can (15 ounces) diced tomatoes with green chilies
1 can (15 ounces) tomato sauce
1 medium onion, diced
1 medium green bell pepper, diced
3 cloves garlic, minced
2 cups low-sodium chicken broth
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 tablespoon olive oil
Heat olive oil in a large skillet over medium heat.
Add diced onion and green bell pepper to the skillet and sauté for 4-5 minutes until softened.
Add minced garlic and cook for an additional 1 minute until fragrant.
Add ground turkey to the skillet and cook, breaking it up with a spoon, until no longer pink, about 6-7 minutes.
Transfer the cooked turkey, onions, peppers, and garlic mixture to the slow cooker.
Add rinsed quinoa, black beans, kidney beans, diced tomatoes with green chilies, tomato sauce, chicken broth, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne pepper to the slow cooker.
Stir all ingredients together until well combined.
Cover and cook on low for 6 hours, or on high for 3 hours, until quinoa is tender and chili is thickened.
Stir the chili before serving and adjust seasoning with additional salt or pepper if desired.
