A simple and flavorful slow cooker chicken recipe that is fully compliant with the Whole30 program. This dish features tender chicken cooked with fresh herbs, garlic, and lemon for a wholesome and satisfying meal.
4 bone-in, skin-on chicken thighs
1 medium lemon, sliced
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1/2 cup chicken broth (Whole30 compliant)
Pat the chicken thighs dry with paper towels.
In a small bowl, combine the dried thyme, dried rosemary, paprika, salt, and black pepper.
Rub the spice mixture evenly over all sides of the chicken thighs.
Heat the olive oil in a skillet over medium-high heat.
Sear the chicken thighs skin-side down for 3-4 minutes until the skin is golden brown. Flip and sear the other side for 2 minutes.
Transfer the seared chicken thighs to the slow cooker.
Add the minced garlic and lemon slices on top of the chicken.
Pour the chicken broth into the slow cooker around the chicken thighs.
Cover and cook on low for 4 hours or until the chicken is cooked through and tender.
Remove the chicken from the slow cooker and let rest for 5 minutes before serving.
