4 bone-in, skin-on chicken thighs
1 medium yellow onion, sliced
4 cloves garlic, minced
1 lemon, thinly sliced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon paprika
1/2 teaspoon sea salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1/2 cup chicken broth (Whole30 compliant)
Place the sliced onion evenly in the bottom of the slow cooker.
In a small bowl, combine the dried thyme, dried rosemary, paprika, sea salt, and black pepper.
Pat the chicken thighs dry with paper towels and rub both sides with olive oil.
Sprinkle the seasoning mixture evenly over both sides of the chicken thighs.
Place the seasoned chicken thighs on top of the onions in the slow cooker.
Scatter the minced garlic evenly over the chicken thighs.
Arrange the lemon slices on top of the chicken.
Pour the chicken broth around the chicken thighs in the slow cooker, avoiding pouring directly over the lemon slices.
Cover the slow cooker with the lid and cook on low for 4 hours, or until the chicken reaches an internal temperature of 165°F (74°C) and is tender.
Carefully remove the chicken thighs from the slow cooker and serve immediately with your favorite Whole30-compliant sides.
