1 medium red onion, peeled and cut into 1-inch chunks
12 ounces baby potatoes, halved
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
1/2 teaspoon smoked paprika
Salt, to taste
Black pepper, to taste
2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly grease it.
In a large mixing bowl, combine the sliced chicken sausage, red bell pepper, zucchini, yellow squash, red onion, and halved baby potatoes.
