4 large russet potatoes
1 cup sour cream
1/2 cup milk
1/2 cup butter, melted
2 cups shredded cheddar cheese
1/2 cup green onions, chopped
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
Wash and pierce the potatoes with a fork, then bake them for about 1 hour or until tender.
Let the potatoes cool slightly, then scoop out the insides into a large bowl.
Add sour cream, milk, melted butter, half of the cheddar cheese, green onions, salt, and pepper to the bowl and mix until smooth.
Transfer the mixture to a greased baking dish and spread it evenly.
Top with the remaining cheddar cheese.
Bake for an additional 20-25 minutes or until the cheese is bubbly and golden.
Let it cool for a few minutes before serving.
Notes
For a spicier version, add cooked bacon or jalapeños.
This dish can be made ahead of time and stored in the refrigerator before baking.
