Apple Cake for Toddlers

2 medium apples, peeled, cored, and finely chopped
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup unsweetened applesauce
1/4 cup plain whole milk yogurt
1/4 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract

Instructions

Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a medium bowl, whisk together the whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
In a large bowl, beat the eggs. Add the unsweetened applesauce, plain whole milk yogurt, vegetable oil, and vanilla extract. Mix until well combined.
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
Fold in the finely chopped apples evenly into the batter.
Pour the batter into the prepared cake pan and spread it evenly.
Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool in the pan for 10 minutes.
Transfer the cake to a wire rack to cool completely before serving.
