Ground Beef and Potato Skillet

A hearty and flavorful one-pan meal featuring seasoned ground beef, crispy potatoes, and sautéed onions, perfect for a quick and satisfying dinner.

1 pound ground beef
4 medium russet potatoes, peeled and diced into 1/2-inch cubes
1 medium yellow onion, diced
3 cloves garlic, minced
2 tablespoons vegetable oil
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
2 tablespoons chopped fresh parsley

Instructions

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
Add the diced potatoes to the skillet and cook, stirring occasionally, until they are golden brown and tender, about 12 minutes. Remove the potatoes from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of vegetable oil.
Add the diced onion and cook until translucent, about 3 minutes.
Add the minced garlic and cook for 30 seconds until fragrant.
Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 6-8 minutes.
Stir in the smoked paprika, dried oregano, salt, black pepper, and crushed red pepper flakes.
Return the cooked potatoes to the skillet and stir to combine all ingredients evenly.
Cook for an additional 3-4 minutes, allowing the flavors to meld and the potatoes to crisp up slightly.
Remove from heat and sprinkle with chopped fresh parsley before serving.
